Cracking Up

…or crackering up, I should say. Today I made the most delicious Swiss cheese crackers. Remember the Nabisco Swiss Cheese crackers that they stopped making (I’m guessing) because they were so unhealthy? (Man, they were good!) These are even better. Yeah, I said it.

Swiss Cheese Crackers:

1 1/2 cups all purpose flour
2 cups grated Swiss cheese
1 stick butter, cold
1 tsp salt
1/2 tsp cayenne pepper (or more)
1 tsp mustard
1 tsp Worcestershire sauce

Combine all ingredients in food processor and process until it comes together. Gather dough on work surface and roll into two 1.5″ logs.

Refrigerate 2 hours or until firm. Cut 1/4″ slices from roll and bake in 325 degree oven for 15-17 minutes, until just barely golden around the edges. (Sprinkle with salt on top before baking if desired.)

Makes approx 6 dozen crackers. But they will disappear quickly.
