Biscotti, Baby!

Oh hellz yeah! I just made the best biscotti I’ve ever made/had. Yes, I said the best.

Cinnamon Pecan Biscotti
(adapted from one I found on all

3/4 Cup Butter
1Cup Sugar
2 Eggs
1 teaspoon Vanilla Extract
1 teaspoon Almond Extract
2 1/2 Cups All Purpose Flour
3/4 tsp Baking Powder
1/2 tsp Salt
1 teaspoon Cinnamon
1 Cup Pecans

Preheat oven to 350 degrees.

Cream butter and sugar until fluffy. Add eggs and extracts. Mix together flour, baking powder, salt & cinnamon. Add to butter-sugar-egg mixture. Mix in pecans.

Separate dough into 2 balls. Roll into 12″ long logs and place each on a sheet pan covered with parchment. Flatten logs to 1/2″ thick.

Bake for 30 minutes. They should be golden brown around the edges. Remove from oven. Keep oven on, but let flattened cookie logs cool for a few minutes. Cut with non-serrated knife into 1/2″ thick slices. Turn slices on their side and return to sheet pans.

Bake for an additional 10-15 minutes until no longer soft. Turn once during second baking.

This makes a lot. Or not nearly enough once everyone gets their hands on them, lol. Enjoy!
